Easy, Healthy Soup full of vitamins and iron

Recipe Ingredients for Squash & Sweet Potato Soup

25 g butter
1 tsp Garlic Cloves
200 g sweet potato
348 g butternut squash
70 g onion
317 g carrot
1/2 tsp smoked paprika
10 g red chilli
750 ml water
1 stock cube

Recipe Directions for Squash & Sweet Potato Soup

  1. STEP 1 - Melt the butter in a saucepan, add the garlic, sweet potato and butternut squash, onion and carrot then cover and cook for 10 minutes.

  2. STEP 2 - Add the smoked paprika and red chilli, then cook for 1 minute. Add the stock, bring to the boil, and then cover and simmer for 15-20 minutes, until the vegetables are tender.

  3. STEP 3 - Allow to cool a little. Blend until smooth.

  4. STEP 4 - Season to taste, then reheat gently for 2 minutes and serve.
