Recipe Ingredients for Squash Soup

3 cup, cubes Squash, Winter, Butternut
2 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
4 clove Garlic
2 Potato large (3" to 4-1/4" dia) Potato, Flesh And Skin
1 tsp Cumin
1 tsp Spices Ground Coriander
1 tsp Cinnamon, Ground
1 tsp, ground Cardamom
1 tsp Turmeric, Ground
6 cup Organic Vegetable Broth

Recipe Directions for Squash Soup

  1. Roast squash (any kinds) in 350 degree oven until tender. Allow to cool and peel/scoop flesh from skin.

  2. Heat olive oil in large pot, add chopped onions and minced garlic, stirring for about 5 minutes. Add chopped potatoes, spices, and squash, then lastly the broth. Bring to a boil, turn down and allow to simmer for 20-30 minutes.

  3. When the potatoes are soft, take pot off heat and use a hand blender to puree. Add some freshly ground pepper. Top each serving with no fat greek yogurt if you wish.
