This is a thick, rich soup with tons of flavor. Something I whipped up off the top of my head, with things I had on hand. Super easy, quick, and a great way to use squash. An instant hit at my house.

Recipe Ingredients for Squash soup

4 serving 2% Reduced Fat Milk
2 tbsp Butter
1 small Onions
2 stalk, medium (7-1/2" - 8" long) Celery
3 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
2 cup, cubes Squash, Winter, Butternut
16 oz Chicken Stock
1 serving Cayenne Pepper

Recipe Directions for Squash soup

  1. 4 cups milk

  2. 2 tablespoons butter

  3. 1 small onion, chopped

  4. 2 stalk celery, chopped

  5. 2 medium carrot, chopped

  6. 3 medium potatoes, cubed

  7. 1 large butternut squash - peeled, seeded, and cubed

  8. 16 fluid ounce chicken stock

  9. 1/8 teaspoon ground cayenne pepper

  10. seasalt and ground black pepper to taste

  11. Directions

  12. Add butter, onion and celery in a large pot. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 10 minutes.

  13. Steam carrot, potatoes, and squash until tender.

  14. Transfer everything to blender or food processor, and blend until smooth. Place soup mixture in crockpot, and mix in any remaining stock and milk to attain desired consistency. Season with salt and pepper. Cook overnight in crockpot on low setting.
