Recipe Ingredients for Squash Soup

1 squash
1/2 large onion
3 cloves of minced garlic
1 1/2 teaspoon olive oil
6 cups of water
2 white potatoes
16 oz uncooked lentils
2 tsp dried parsley
2 cups of fresh baby spinach leaves
1 1/2 teaspoons of ground cumin
1 1/2 teaspoons of dried ginger
1 1/2 teaspoons of turmeric

Recipe Directions for Squash Soup

  1. Preheat the oven to 400° F. Cut the acorn squash in half, scrape out seeds and strings, and place both halves face down in a shallow pan with ¼ inch to ½ inch of water. Bake at 400° F for 45 minutes, or until squash is fork tender.

  2. While squash is cooking, sauté onion and garlic over medium-high heat with one teaspoon of olive oil in a large soup pot for several minutes, until starting to become tender.

  3. Add 4 cups of water, and then add lentils and potatoes. Add 2-4 more cups of water, enough to cover lentils with 3-5 inches of water.

  4. Bring mixture to a boil, and then simmer for 30-45 minutes, until lentils and potatoes are tender.

  5. When squash is done, remove from oven and scoop out of shells into bite-sized chunks.

  6. Add squash, spinach, and parsley to lentil-potato mixture, stir for 1-2 minutes (enough to start wilting spinach), and remove from heat.

  7. Heat remaining 1 ½ tablespoons of olive oil in a small, nonstick skillet on low. Add cumin, ginger, and turmeric, and blend thoroughly.

  8. Stir spiced oil mixture into lentil soup until well mixed.

  9. Serve in bowls sprinkled with Asiago cheese (if desired) and seasoned with salt and pepper to taste. In lieu of salt, 1-3 teaspoons of miso paste can be stirred into each serving.
