if you prefer oyster sauce substitute it for soy sauce

Recipe Ingredients for Squash Soup

1 squash (seeded, peeled, and chopped into 2-inch pieces)
2 cloves of garlic (slightly smashed, but kept in one piece)
1/8 cup fresh ginger, sliced
2 pounds boneless, skinless chicken thighs (cut in 1-inch pieces)
1 tablespoon Beef bouillon
1 tablespoon Soy sauce
1 Salt
1 Pepper

Recipe Directions for Squash Soup

  1. Ginger- cut into 4 slices (peeled, sliced about 2 inches long, slightly smashed but kept in one piece)

  2. Salt and pepper the raw chicken.

  3. In a soup pot, cook chicken, garlic, and ginger in olive oil.

  4. Once chicken is cooked through, add squash and cook for five minutes.

  5. The squash will start to become tender.

  6. Add water to the pot so that it just covers the squash and chicken combination.

  7. Bring the water to a boil and add the beef bouillon, soy sauce, and pepper to taste.

  8. Simmer for 15-20 min.

  9. The squash should be very soft.

  10. Serve as is or with rice.

  11. Feel free to adjust the proportions of the recipe to your taste, or to substitute for the chicken.
