This is a great winter dish. I use hubbard squash. Split and bake with seeds in for a nutty flavor. Serve with warm whole grain bread.

Recipe Ingredients for Squash Soup

2 tbsp olive oil
2 cloves garlic, finely chopped
2 tbsp flour
4 cups chicken broth
3 cups cooked squash

Recipe Directions for Squash Soup

  1. Heat olive oil. Brown garlic. Add flour to make a roux.

  2. Add chicken broth and squash. Simmer and serve!
