Recipe Ingredients for Squash Soup

4 1/2 lbs butternut squash
6 cups low sodium chicken broth
2 cups water
2 cups chopped onion
2 tbs ginger
2 tbs olive oil or butter

Recipe Directions for Squash Soup

  1. Cut squash in half and clean out seeds.

  2. Bake, cut sides down, on a baking sheet at 425 degrees for 40-45 minutes.

  3. Chop 2 large onions.

  4. While squash is baking, saute onions and ginger in olive oil or butter till onions are opaque.

  5. Add broth and water and simmer 10 minutes.

  6. Let squash cool.

  7. Scoop out 1/4 the squash and put into blender.

  8. Add 1/4 of broth and onions to the blender and blend just until smooth. Pour into large pan

  9. Do again until all squash is blended with the broth.

  10. Reheat the soup May add water to desired thickness.
