Recipe Ingredients for Squash Soup with peppers and fresh lime

24 oz squash
29 oz chicken broth
1 large potatoe
1 green pepper
1 jalapeno pepper
1/2 salt
1 tsp cumin
1 tablespoon lime juice
1/2 tablespoon lime juice
1/4 cup cilantro

Recipe Directions for Squash Soup with peppers and fresh lime

  1. cook quash and puree it. It can be from frozen squash

  2. potatoe peeled and diced.

  3. peppers seeded and finley chopped

  4. In a large sauepan over medium high heat, combine squash and broth. Bring to a simmmer and cook un covered until the squash is soft.

  5. Add potatoe, red (green) ell pepper and jalapeno and continue to simmer until the potatoe is tender and soup has thickened, about 10 minutes.

  6. Stir in salt, cumin ahnd lime juice. Serve topped with fresh cilantro and with lime wedges along side.
