Hearty squash dish. Sever with salad/veggie or alone.

Recipe Ingredients for Squash & Sauce

20 oz Crushed Tomatoes
1 medium raw Bell Pepper Green
1 medium raw Bell Pepper Red
2 tbsp Olive Oil, Extra Virgin
2 clove Garlic
0.25 tbsp, ground Basil, Dried
0.25 tbsp Oregano, Ground
0.25 tbsp Pepper, Red Or Cayenne
4 tbsp chopped Shallots
2 squash (4 inch dia) Squash, Winter, Acorn
6 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Squash & Sauce

  1. First cut (lengthwise) and de-seed the acorn squash. lay cut side down on buttered baking sheet and bake for 40 mins on 375. Let sit in oven until ready to add to skillet.

  2. In large skillet heat olive oil - cook chopped shallots, minced garlic, and the chopped green & red peppers 9about 5 mins).

  3. Then add the crushed tomatoes, red pepper flakes, basil, & oregano.

  4. Bring to boil then simmer for 15 mins uncovered (stirring occasionaly).

  5. Then chop or shred up the acorn squash and add it to the mixture. Stirr in and cover with cheese and serve.

  6. Enjoy!
