My own recipe for a very unusual, but yummy, combination to use as grilled sandwich or wrap filling.

Recipe Ingredients for Squash Sandwich Filling

200 grams (1 cup) buttercup squash, cooked
2 tbsp diced onion
30 grams roasted red pepper
30 grams guacamole dip
1 wedge laughing cow light garlic and herb cheese
1/8 tsp red pepper flakes
30 grams spinach, (large handful) chopped fine
30 grams tomato, diced fine
1/4 tsp garlic, minced (or to your taste)
1 salt
1 pepper

Recipe Directions for Squash Sandwich Filling

  1. Combine all ingredients together.

  2. Add salt and pepper to taste.

  3. Cook together in microwave 2-3 minutes to get cheese to melt.

  4. Put on wrap, or on bread to grill a sandwich.

  5. Eat - YUM!
