Recipe Ingredients for Squash Risotto

12 oz Squash, Winter, Butternut
1 1/4 cup Rice, White, Medium-grain
2 1/2 cup Organics Vegetable Broth
2 1tsp Olive Oil
5 tbsp Parmesan, Shredded Cheese
1/4 tsp Salt, Table
1/4 tsp Pepper, Black

Recipe Directions for Squash Risotto

Combine rice and oil, Microwave 3 minutes. Add broth and water, microwave 9 minutes. Stir. Microwave 6 minutes. Remove and let stand 5 minutes while heating up the puree'd squah. Stir squash, parmesan cheese, salt and pepper. Serve.
