4 main course or 6 side-dish servings Squash is peeled and cut into bite size pieces Minced parsley is optional. Half-and-half can be substituted for light cream Any short-grain Italian rice can be substituted for Arborio

Recipe Ingredients for Squash Risotto

2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 1/5 cups Arborio rice
4 cups chicken broth
1 tbsp rice vinegar
1 tsp dried sage
1/2 tsp salt
1/2 tsp dried thyme
1/4 tsp pepper
4 cups butternut squash
1/2 cup light cream
1/2 cup grated parmesan cheese
1/4 cup parsley

Recipe Directions for Squash Risotto

  1. In large saucepan, heat oil over medium heat; cook onion and garlic, stirring for 2-3 mintues. Add rice; cook, stirring for 2-3 minutes.

  2. Stir in chicken broth, vinegar, sage, salt, thyme and pepper; bring to boil. Cover and reduce heat to meduim-low; cook for 5 minutes. Stir in squash; simmer for 15-18 minures or until squash and rice are tender but still slightly firm.

  3. Stir in cream (rice should be moist and creamy). Serve immediately topped with cheese and parsley.

  4. TIPS: If rice gets dry upon standing, add a little more broth. Purchase pre-diced squash if in a hurry or out of season.
