Recipe Ingredients for Squash Risotto with Prosciutto and Pine Nuts

2 cups Acorn squash (from 1 small squash)
1 tbsp extra virgin olive oil
3/4 cup onion, chopped
1 cup arborio rice
2 cups beef broth
1 1/2 oz prosciutto, cut into ribbons
1 oz pine nuts
2 oz Parmesan cheese
1 tbsp butter

Recipe Directions for Squash Risotto with Prosciutto and Pine Nuts

  1. Cut the squash in half, lightly oil and roast in an oven set at 375 for 45-60 minutes.

  2. Warm the beef broth in a pan.

  3. In a separate pan, heat oil and add onion, sauteeing until tender, about 10 minutes. Add rice and sauté 1 minute. Beginning adding broth, 1/2 cup at a time. Wait for rice to absorb stock before adding more. Cook until el dente.

  4. Add toasted pine nuts, prosciutto, butter and cheese.
