Sauteed squash and tomatoes, with fresh basil and parmesan cheese.

Recipe Ingredients for Squash Primavera

3 medium yellow squash
3 medium zucchini
2 cups canned diced tomatoes
1 small onion
1 tablespoon olive oil
1 dash salt
1 dash pepper
10 basil leaves
3 tablespoons parmesan grated

Recipe Directions for Squash Primavera

  1. Slice squash in half lengthwise, then cut into 1 inch pieces

  2. Chop or slice onions

  3. Saute vegetables in olive oil lightly - should still be firm.

  4. Add tomatoes, salt, pepper, and basil (cut diagonally into strips)

  5. Cook for 1-2 minutes

  6. Serve with grated parmesan cheese
