Recipe Ingredients for Squash and Pepper Medley (Curves Protein 2)

8 oz. Sliced Summer Squash
1/2 Sweet Red Pepper
1 tbsp. Extra Virgin Olive Oil
1 tbsp. Raw Chives
1/4 tsp. Salt
2 pinches Ground Black Pepper
2 tbsp. Lemon Juice
2 tbsp. Grated Parmesan Cheese

Recipe Directions for Squash and Pepper Medley (Curves Protein 2)

  1. Cut squash and pepper into julienne strips.

  2. Heat olive oil in skillet.

  3. Add minced chives and saute briefly.

  4. Add squash and red pepper to skillet, with salt and pepper, and saute 4 minutes.

  5. Remove from heat.

  6. Pour over lemon juice and parmesan cheese and toss to coat well.
