Gluten and wheat free breakfast or side high in fiber.

Recipe Ingredients for Squash & Oats

3 cup, cubes Squash, Winter, Butternut
3 cup dry Steel Cut Oats
5 oz Light Brown Sugar
1 tbsp Salt, Table
1/2 stick Margarine, Regular, Hard
3 cup (8 fl oz) Water

Recipe Directions for Squash & Oats

  1. In large pot, bring 3 cups water and 1 tablespoon salt to boil.

  2. Peel and seed raw butternut squash, then grate in food processor or cube. Add to boiling water, lower temp to medium low and cook for 10 minutes, covered.

  3. Add Oatmeal, stir in and continue cooking on medium low or low for additional 10 minutes.

  4. Remove lid, add all remaining ingredients, mix and serve hot.

  5. Spice with nutmeg, cinnamon, ginger or other favorites.
