Recipe Ingredients for Squash with Green Pepper, Carrot and Onion

1 large Squash, Summer, All Varieties
1 medium raw Bell Pepper Green
1 medium Carrots
4 tbsp chopped Onions
1 1tsp Olive Oil
1 tbsp Parmesan, Grated Cheese

Recipe Directions for Squash with Green Pepper, Carrot and Onion

  1. thinly slice squash and carrot, chop bell pepper.

  2. In nonstick skillet over medium heat olive oil, heat and then the carrot, onion & pepper, cooking for 3-5 minutes or until slightly soft.

  3. Add yellow squash and 1 tsp minced garlic. Cover and cook 8-10 minutes, stirring occasionally.

  4. When all vegetables are tender, top with parmesan cheese. Cover and cook another miinute until cheese is melted.
