Squash Gnocchi Recipe

A twist on the classic potato gnocchi.

Recipe Ingredients for Squash Gnocchi

1 1/2 cups acorn squash, 2 small squash
1 1/2 cups butternut squash, 1 small squash
2 eggs
6 1/2 cups flour
1 tsp salt
4 cloves garlic, ground into paste

Recipe Directions for Squash Gnocchi

  1. Cut the squash in half, and scoop the seeds out.

  2. Bake squash on a baking sheet lined with foil in the oven at 350 until the skin begins to seperate and brown. Squash should be soft to the touch.

  3. Allow to cool, and peel the skin away, mash in a bowl.

  4. Add salt, garlic and egss. Mix well.

  5. Add flour 1 cup at a time until mix thickens.

  6. Roll dough into logs and cup up into bite size pieces.

  7. To cook, drop gnocchi one at a time into boiling salted water. Gnocchi will float to top once cooked.

  8. Remove from boiling water with slotted spoon and top with choice sauce. (I recommend a beurre blanc)
