Recipe Ingredients for Squash enchiladas

40 oz Squash Butternut
186 grams kale
2 tbsp Olive Oil
190 grams chopped Onions
3 tsp Garlic
150 grams Corn, Sweet, Yellow
230 grams chopped Peppers, Sweet, Red
8 oz Cheese Mozzarella Part Skim
8 oz Monterey Jack
12 tortillas 6" White Corn Tortillas 30ct

Recipe Directions for Squash enchiladas

Roast the squash until tender at 400. (in roasting pan with some water). Cool. Saute the other veggies in oil, chopped, then add the squash. Put in tortillas with half the mix of shedded cheeses, and put remaining cheese on top. Cook at 350 until tortilla are heated through - 20 minutes or so.
