An indian twist to an American favorite.

Recipe Ingredients for Squash Curry Chili

1/4 cup organic olive oil
1/2 pound organic ground beef
1 yellow onion
5 cloves of organic garlic
4 small organic carrots
3 cups organic butternut squash
2 stalks celery
28 oz. organic diced tomatoes, canned
1 tsp mustard seeds
3 tablespoons ground cumin
3 tablespoons ground coriander
1 teaspoon cinnamon
1 teaspoon cloves
2 tablespoons curry powder
1 tablespoon turmeric
3 teaspoons salt

Recipe Directions for Squash Curry Chili

  1. Heat oil on medium temperature

  2. Add onion and sautee until limp

  3. Add and brown the meat (although this recipe calls for beef, I use buffalo- you can't get buffalo analyzed though.)

  4. Turn temp to Low

  5. Add chopped carrots, chopped celery and diced squash and stir frequently

  6. Add all of the spices and heat the spices, stirring constantly- you may need to add more oil at this point- it will want to stick to the bottom of the pan.

  7. Add tomatoes and salt to taste.

  8. Bring to a gentle boil- stirring constantly

  9. Simmer, covered, for one hour, stirring frequently.
