Summer vegetables, briefly sauteed. Very good over rice.

Recipe Ingredients for Squash, Corn & Bean Saute w/Tomatoes

2 squash, green
2 ears of corn
3/4 cup black beans, cooked
1/2 tsp. sea salt
3 tomatoes, medium
1 clove garlic, minced
2 1/2 tbsp. basil
3 tbsp. olive oil

Recipe Directions for Squash, Corn & Bean Saute w/Tomatoes

  1. Dice squash. Remove corn from cobs. Dice tomatoes. Chop basil. Mince garlic.

  2. Mix together with 1/2 teaspoon sea salt & black beans.

  3. Heat olive oil in large skillet. Add vegetable mixture and saute over high until squash begins to soften.

  4. Serve over rice.
