Recipe Ingredients for Squash Casserole

3 cups diced yellow squash
3 cups diced zucchini
1 tablespoon olive oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
1/3 teaspoon salt
1/3 teaspoon black pepper
1/3 teaspoon garlic powder
1 cup grated cheddar cheese
15 Ritz crackers (crackers)

Recipe Directions for Squash Casserole

  1. Pre-heat oven 350'

  2. Saute squash & zucchini in oil over medium-low heat til it has completely broken down, 15-20 minutes.

  3. Line a colander with clean tea towel. Place the cooked squash in lined colander. Squeeze excess moisture from the squash. Set aside.

  4. In a medium size skillet, saute the onion in butter for 5 minutes.

  5. Remove from pan and mix all ingredients together except cracker crumbs.

  6. Pour mixture into a buttered casserole dish and top with cracker crumbs.

  7. Bake 25 - 30 minutes.
