All the great tastes of summer in one dish. A great meatless entree for the vegetable lover.

Recipe Ingredients for Squash Casserole

4 cups Zucchini
4 cups Summer Squash
1 large Onion
3 cups Frozen Corn
2 cups Sliced Mushrooms
3 tablespoons Grape Seed Oil
1/2 cup Low Fat Milk
4 oz Low Fat Cheese

Recipe Directions for Squash Casserole

  1. Saute Corn (unthawed), Onion, Mushrooms in Oil

  2. Slice Squash in thick half rounds and boil until nearly done (not mushy), drain well

  3. Mix sauteed vegetable and squash in flat type casserole dish (not a bowl)

  4. Pour Milk over and dot with cheese (Low Fat Velveeta works great)

  5. Bake at 325 degrees for 30 - 45 minutes
