Recipe Ingredients for Squash casserole

2 large Squash, Summer, Zucchini, Includes Skin
6 crackers Saltine Crackers
2 large Egg, White
1 tablespoon Margarine-like spread
0.5 cup, chopped Onions
1 cup, shredded Low Fat, Cheddar Or Colby Cheese

Recipe Directions for Squash casserole

  1. slice squash and boil with onion untill tender

  2. drain and pour in bowl

  3. add salt and pepper to taste, crumbled crackers, butter, and eggs

  4. mashed with potato masher, and 1/4 cup of cheese

  5. pour in baking dish and top with remaining cheese

  6. bake for 20-30 min at 350 or until bubbly
