Squash/Zucchini Casserole in Crock Pot

Recipe Ingredients for Squash Casserole

4 cup Yellow Squash
1.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Shredded Carrots
1.5 cup Cream of Chicken Soup
8 oz Light Sour Cream
8 tbsp Salted Butter
1/4 cup Gold Medal All Purpose Flour
8 oz Panko Breadcrumbs

Recipe Directions for Squash Casserole

  1. In large bowl combine cut up squash, zucchini, green onions, carrots and soup.

  2. In separate small bowl, mix well flour and sour cream then add mixture to vegetable mix.

  3. Melt butter and mix in bread crumbs.

  4. Put 1/2 of bread crumbs in bottom of crockpot, then vegetable mixture, then top with remaining bread crumbs.

  5. Cook in crockpot on low for 7-9 hours.
