A Primos family recipe from Mary Alice Blackman of Flowood. Easy to prepare and delicious.

Recipe Ingredients for Squash Casserole

2 c yellow squash, cooked
1 t sugar
1/2 c mayonnaise
1 T butter
1/2 c onion, chopped
1/4 c green pepper, chopped finely
1 egg, beaten slightly
1/2 c Swiss cheese, shredded
1/2 stick margarine
1/2 c crackers, saltine, crumbled

Recipe Directions for Squash Casserole

  1. Preheat oven to 350 degrees. Cut squash into pieces and boil in water until tender. Drain and blend with sugar and mayonnaise. Spread squash mixture into a 9" x 9" casserole dish.

  2. Saute onions and green peppers in butter until tender. Stir egg and cheese into onions and peppers. Spread mixture over squash. Melt margarine and add cracker crumbs. Spread evenly over top of casserole. Bake 30 minutes.

  3. Yield: 6~8 servings.
