This is a great way to sneak squash to vegetable haters

Recipe Ingredients for Squash Casserole

8 yellow squash
1 c cheddar cheese, grated
1 can cream of mushroom soup, light
3/4 c crackers (Ritz), crushed
1/2 c onion, grated
2 eggs, lightly beaten
1 tsp. salt
3 T butter

Recipe Directions for Squash Casserole

  1. Boil squash in salted water and drain when tender. Mash.

  2. Add butter, soup, onion, cracker crumbs and cheese.

  3. Beat eggs lightly with a fork and fold into mixture.

  4. Pour into Pam sprayed casserole dish and bake at 350 degrees for 30 to 45 minutes until puffed and light brown on top.
