Yellow Squash baked in a delicious casserole.

Recipe Ingredients for Squash Casserole

2 lb. yellow squash
1/2 c low fat cheese
2 c saltines, crushed
2 eggs, beaten
1/2 c whole milk
1/2 c diced onion

Recipe Directions for Squash Casserole

  1. slice squash in 1/4 inch slices,

  2. add to boiling, water with minced onion.

  3. Cook until just soft and drain.

  4. Stir in crackers, cheese, and beaten egg.

  5. Spritz casserole dish with Pam or other spray.

  6. Pour in squash mixture.

  7. Bake in 375 oven or toaster oven 25-30 min. until bubbly and golden brown.
