Squash Cheese casserole...easy and delicious

Recipe Ingredients for Squash Casserole

2 cup, mashed Squash, Summer, Zucchini, Includes Skin
1 cup Corn Bread Stuffing
2 oz Sharp Cheddar
1 large Egg, Whole
2 oz Cottage Cheese, Lowfat, 2% Milkfat
1 cup Corn Bread Stuffing

Recipe Directions for Squash Casserole

  1. I use frozen cooked squash with onions (fresh from my garden). Drain if needed.

  2. Combine egg & cottage cheese and shisk together. Add drained cooked squash & onions. Add 1 cup of cornbread stuffing mix and the shredded cheese. Mix well and pour into casserole dish. Top with the remaining stuffing. Bake at 350 degrees for about 30 minutes.
