Recipe Ingredients for Squash Casserole with Pecans

16 oz Squash, Summer, All Varieties
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
8 oz Vidalia Onion
2 serving VIGO EXTRA VIRGIN OLIVE OIL
12 oz Cream Style Corn
3 tsp Sugars, Granulated
2 oz Corn Meal
0.25 cup Bread Crumbs

Recipe Directions for Squash Casserole with Pecans

Preheat oven350. Spray 2qt. dish. Slice squash and cooktill real tender (15mins.)Saute chopped onions and pepper in oil tillsoft. Drain squash and mash well. In Med. bowl combine squash,corn,sugar,pepper-onion mix and corn meal.Other bowl mix chopped pecans,bread crumbs with melted butter. Pour squash mix in dish, top with bread crumbs. Bake 30 mins. till bubbly and browned.
