Recipe Ingredients for squash casserole (Country Living Mag.)

1/2 tbl butter
2 lb squash, summer
1/2 c onion, diced
1 c water
1/2 tsp salt
1/2 tsp salt
1/4 tsp pepper
1 egg
1/2 c mayonaise, helman's
1/2 c cheese, cheddar
1/2 c cracker crumbs, butter

Recipe Directions for squash casserole (Country Living Mag.)

  1. cook onion & squash in boiling salt (1/2 tsp) water 15 minutes, drain & cool

  2. beat with mixer (should remain somewhat chunky

  3. add egg, mayo, cheese, salt (1/2 tsp) and pepper

  4. put in buttered 2 qt casserole, bake 30 min, 350 F

  5. top with cracker crumbs
