squash burittos can be made vegan if you leave out the cheese. the initial prep takes a long time but stays great in fridge. make a few batchs at the same time.

Recipe Ingredients for Squash Burittos

4 cup butternut squash, cubed
1 tbsp olive oil
3 tsp chilli powder
1 onion, dice
1 red pepper diced
1/2 cup orange juice

Recipe Directions for Squash Burittos

  1. cube the squash, dice the red pepper and onion.

  2. put the onion oil and chili powered in frying pan on high heat untill onions are soft.

  3. add red pepper, squash and orange juice and let simmer untill squash is soft.

  4. put mixture on tortilla shell with cheese fold up and put in the oven for about 10 min on 300.

  5. cut in half and serve.
