After you cook these, freeze them in a single layer. Once they're frozen, toss them in a zip-up bag in the freezer. To reheat, cook at 350 degrees for 10-15 minutes, until hot throughout.

Recipe Ingredients for Squash Bites

16 oz frozen squash
1 cup Italian flavored bread crumbs
1 1/2 cups shredded Mozzarella cheese
2 large eggs

Recipe Directions for Squash Bites

  1. Preheat oven to 375.

  2. Combine all ingredients.

  3. Shape into flat balls (like a chicken nugget). Put on a greased baking sheet, leaving a few inches between each one.

  4. Bake for 20 minutes or so, flipping nuggets after 15 minutes.
