Makes 6 servings



Acorn squash, potatoes, onion, and chicken broth. A low-cal low sodium recipe, particularly when you replace the half-and-half with fat free half-and-half. Very tasty!

Recipe Ingredients for Squash Bisque

3 tbs margarine
1/4 c scallions
1 carrot, shredded
2 medium potatoes, cubed
2 acorn squash, cubed
4 cups low sodium chicken broth
1 cup half-and-half
1 tsp salt
1 tsp pepper

Recipe Directions for Squash Bisque

  1. In large saucepan, melt margarine

  2. Saute onion and carrot until tender

  3. Add potatoes, squash, and chicken stock

  4. Simmer soup, covered, over low heat for 25 minutes or until vegetables are very tender

  5. Puree mixture in a blender

  6. Return to saucepan; add half-and-half

  7. Season to taste with salt and pepper

  8. Heat and garnish with chopped chives or low-fat sour cream swirls
