Recipe Ingredients for Squash & Barley Bake

2 medium zucchini
2 medium yellow squash
1 green pepper
1 large onion
1/4 pound cheese, shredded
1 1/2 cups pearl barley
28 oz crushed tomatoes

Recipe Directions for Squash & Barley Bake

  1. preheat oven to 350.

  2. oil a 2quart casserole dish (with lid)

  3. chop all squash into 1/2 inch slices

  4. sprinkle with sale & pepper, if desired

  5. toss other ingredients with squash until well mixed.

  6. cover tightly and bake 1.5 hours or until the squash is tender and the barley is cooked.
