my homemade rolls, with mashed butternut squash and homemade applesauce

Recipe Ingredients for Squash and Applesauce Rolls

2 tbsp dry yeast
1/4 c water, warm
1 c milk, warm
2 eggs, beaten
5 c whole wheat flour (plus a little more if needed)
2 c bread flour
2 c butternut squash, mashed
1 c applesauce
1/4 c honey
1/4 c butter, melted
2 tsp salt

Recipe Directions for Squash and Applesauce Rolls

  1. Mix yeast and warm water to dissolve.

  2. Stir in milk and honey.

  3. After yeast proofs, mix in melted butter and the eggs.

  4. In large mixing bowl, stir together bread flour and 3 c of the whole wheat.

  5. Adding 2 TBSP of wheat gluten helps texture.

  6. Gradually add liquids and remaining flour, adjusting flour for texture - not too dry, but very moist.

  7. Knead until smooth.

  8. Rise once in bowl.

  9. Shape rolls.

  10. Put in pie pans or cake pans, a dozen per pan.

  11. Bake at 350F 15-20 minutes.

  12. Remove from pans and cool.
