Recipe Ingredients for squach & corn chowder with goat cheese croutons

4 oz. goat cheese
3 tbs. egg
1/3 cup cornmeal
4 oz. bacon
1 cup onion
4 garlic cloves
2 tsp chilis
4 cups pumpkin puree
4 cups chicken broth
1/2 cup white wine
12 oz. corn
2 tbs olive oil

Recipe Directions for squach & corn chowder with goat cheese croutons

  1. Cut chilled goat cheese into rounds then wedges. dredge in beaten egg then cornmeal. Freeze one hour. chop and brown bacon. set aside.

  2. roast quartered squash or pumpkin with quartered onion and garlic, drizzled with olive oil til soft.

  3. combine all ingredients except bacon and croutons and heat. Puree 3 cups of it then recombine. stir in sage if desired. Top with croutons and bacon.
