Recipe Ingredients for Springtime Wheat Berry Salad

0.5 cup Wheat, Soft White Berries
1 carrot (7-1/2") Carrots
1 stalk, large (11"-12" long) Celery
0.25 cup Pearl Onions
0.25 cup fresh Parsley
1 tbsp Extra Virgin Olive Oil
1 tbsp Vinegar red wine
1 tbsp Lemon Juice, Canned Or Bottled
0.5 Teaspoon Thyme
1/4 tsp Sea Salt
0.5 tsp Sugars, Granulated
0.25 tsp Garlic Powder

Recipe Directions for Springtime Wheat Berry Salad

  1. Soak wheat berries overnight and then cook in fresh water(at least 4 times the amount of berries) in a pot for 1-1 1/2 hours, till chewy but tender. Cool before adding to the salad.

  2. Chop veggies in small bite sized pieces and mix all together in a medium sized bowl.

  3. Mix together dressing and pour over the salad.

  4. Mix together and store in the fridge till ready to serve or at least 1 hour to let the flavors come together.
