A version of breakfast casserole, similar to the one found at Let's Dish (a bit lighter) - yummy

Recipe Ingredients for Springtime Egg Bake

8 slices wheat bread
2 c egg beaters
1 c. milk
1 T. dijon mustard
1 t. parsley
1 t. dill
1 t. pepper
1 c. chopped asparagus
1 c green pepper
1/2 c onion
1 c mushrooms
1/2 lb. ham
1 c. cheddar cheese
1 c. swiss cheese

Recipe Directions for Springtime Egg Bake

  1. Tear bread and place in bottom of 9x13 pan.

  2. In a bowl, blend egg beaters, milk, parsley, pepper, mustard. Sprinkle cheese, ham, asparagus over croissants.

  3. Pour egg mixture over bread. Cover and put in refrigerator over night.

  4. Next morning bake at 400 degrees covered for 40 min. Uncover and cook for 10-15 more min until brown and puffy.
