Taken from Williams-Sonoma's "Eat Well" cookbook. Substituted orzo for pasta stars and baby spinach for pea shoots, as database did not include them.

Recipe Ingredients for Spring Vegetable Soup with Parmesan and Orzo

1 salt and pepper to taste
1/2 cup orzo
2 large eggs
4 cups chicken broth
1/2 cup carrots, diced
2 cups baby spinach, chopped
1/4 cup Parmesan cheese, grated

Recipe Directions for Spring Vegetable Soup with Parmesan and Orzo

  1. Bring a small saucepan of salted water to a boil. Add pasta and cook until al dente, about 8 minutes or according to package directions. Drain and rinse under cold running water, then set aside. Beat eggs lightly to blend and season with salt and pepper.

  2. Bring broth and 1 cup water to a simmer in a medium saucepan over medium-high heat. Add carrots and simmer, uncovered, until crisp-tender, 5-6 minutes. Add spinach and simmer until tender, 2-3 minutes. Remove pan from heat and slowly drizzle in beaten egg, stirring soup gently in one direction as you pour. Gently stir in pasta and Parmesan cheese and season to taste with salt and pepper. Serve at once.
