An amazingly filling and neutricious lunch packed with neutricious veg and high in protein. My personal favorite is to add 1 tbsp of Nando's sun dried tomato and basil peri peri marinade (medium). It really makes the dish amazing. For an even lower calorie dish, use 1 whole egg and 2 egg whites and cut out the oil. This dish is so versatile,you can substitute a cup of any kind of mixed salad veg and it will turn out wonderfully!

Recipe Ingredients for Spring scrambled veggie egg on toast

1 slice nimble low calorie bread
2 large egg,whole
30 g broccoli
30 g mushroom
50 g red pepper
20 g spinach,or garden cress
1/2 chilli pepper
7 g parmesan,finely grated
1 tsp olive oil
1 salt
1 pepper

Recipe Directions for Spring scrambled veggie egg on toast

  1. Break the eggs into a bowl and mix well. Add the salt,pepper,parmesan and chilli seasoning/marinade if your using it.

  2. chop the veg into small pieces and mix well.

  3. Heat the oil in a pan and pour over the egg mix.

  4. Leave the egg to fry for 30seconds and then stir with a spoon,making sure that any egg stuck to the pan is lifted.

  5. Stir the egg constantly for 2-3 mins until scrammbled and cooked throughout.

  6. Serve on a slice of wholewheat low calorie bread.
