Recipe Ingredients for spring salmon salad with garlic toast

3 ounces fresh salmon
1 cup romain lettuce
1/4 cup yellow bell pepper
1/4 cup red bell pepper
1/4 cup green bell pepper
1/4 cup sliced carrots
1/4 raisins
1/4 cup mandarin oranges
1 slice toasted whole wheat bread
1/2 tbspn smart balance butter
1 tbspn roasted garlic

Recipe Directions for spring salmon salad with garlic toast

  1. Season salmon with a little olive oil. salt, pepper and a garlic powder. place salmon in foil bag.

  2. Preheat oven to 400 degrees place salmon on baking sheet place in oven for 25-30 mins. remove from oven and let rest for 3-5 mins.

  3. cut up romain lettuce, bell peppers and carrots and mix in salad bowl. peel oranges removing all white parts. carfully cut out each segment of the orange and add to salad. add raisins.

  4. open salmon pouch (carefully steam will escape) serve salad on to you plate ans the rest the salamon ontop.

  5. (use light dressing such as lighthouse blue cheese (80 calories per serving (2tbspn) or use a citrus vinegarette.

  6. for garlic toas. peel and slice garlic cloves add to hot pan with about 1/2 tspn olive oil and place on med heat till golden brown remove from heat. Mince the roasted garlic add to butter. mixbutter and garlic untill all flavors are well ixed spread on to wheat bread and place into preheated oven set to (broil) let cook til bread is toasted. about 5 min remove and serve.
