Spring Rolls from Terra Americana

Recipe Ingredients for Spring Rolls

7 large shrimp, uncooked - minced
3 cups lettuce, chopped
2 cups cabbage, chopped
1 carrot, shredded
3 stalks celery, chopped
1 egg
3 tbsp tamari
1/2 tsp cayenne pepper, (we prefer to use a Vindaloo seasoning blend)
1/2 tsp sea salt
1/2 tsp white pepper
16 wonton wrappers (we prefer rice paper)
1/2 cup rice flour
1/2 cup arrowroot flour
1 egg
1/4 cup peanut oil

Recipe Directions for Spring Rolls

  1. In a sauce pan, saute lettuce, cabbage, carrots and celery. Stir frequently adding tamari gradually as well as the peppers and salt.

  2. When the vegetables have fully cooked add 1 egg and toss in the pan on low heat.

  3. Add shrimp, toss and turn off heat.

  4. If you are using rice wrappers, soak individually to soften.

  5. Wrap 1 tbsp of the saute in each mix. Use extra wrappers to reinforce any that might seam flimsy.

  6. In a plate toss 1/4 cup of each of the flours. Dip each egg roll in the remaining egg, which has been whipped.

  7. Half way through you will need to replenish the flour mixture.

  8. In the sauce pan drizzle 1 tbsp of the oil.

  9. Lightly fry 4 egg rolls at a time. Roll them in the pan so that all sides begin to brown.

  10. Replenish oil as needed.
