Spring rolls (like the ones I get at the Vietnamese restaurant). Makes 2--one per person. Use the 12" wrappers. Add mint leaves for a refreshing "zing".

Recipe Ingredients for Spring Rolls

2 spring roll wrappers
1/2 cup rice noodles
1/4 cup bean sprouts
4 shrimp
1/4 cup hoisin sauce

Recipe Directions for Spring Rolls

  1. Soak wrappers in cool water until limp and stretchy.

  2. Place cooked rice noodles (vermicelli), bean sprouts, and shrimp on each open wrapper.

  3. Roll wrapper like burrito.

  4. Eat with hoisin sauce.
