my wife's imitation of Taiwan spring rolls

Recipe Ingredients for Spring Rolls

3 oz Planters Honey Roasted Peanuts
1 1/2 fruit Avocado
3 leaf Looseleaf Lettuce
6 sheets Roasted Seaweed
2 wonton wrappers {actually 12 spring roll wrappers, not available on calorie-count.com; equivalent cal and carbs}
4 oz (slices) Virginia Brand Smoked Ham
1 cup strips celery
1 cup strips carrots
12 spears asparagus
1 1/2 red pepper, broiled
3/4 cup Mayonnaise

Recipe Directions for Spring Rolls

  1. soak the spring roll rice sheets in water for about 15 min.

  2. dry each off with a towel

  3. grind peanuts, mix w/mayonnaise

  4. spread each sheet w/1 tblsp of that mix

  5. add 2 sticks carrots

  6. add 2 sticks celery

  7. add 1 asparagus stick cut in half

  8. add 2 thin strips of pepper

  9. cut the ham in strips and add 3 per roll

  10. wrap it up and that's it
