Asparagus, mushroom and spring onion lemony risotto.

Recipe Ingredients for Spring Risotto

200 grams Rice
30 grams Margarine
250 grams Asparagus
250 grams Mushrooms
1 small Onions
3 small (3" long) Onions, Spring Or Scallions
2 clove Garlic
70 grams Twijfelaar cheese (cow, goat, sheep)
1 tbsp Olive Oil
220 grams Wine, Table, White
1 tsp Salt, Table
1 grams Pepper, Black
30 grams Lemon Juice
1 serving Beef Stock

Recipe Directions for Spring Risotto

  1. Prepare the asparagus, trim the edges and place in a baking tray with the olive oil, garlic, salt and pepper. Roll them to get evenly covered.

  2. Let them roast for 10'-12' in 180C. When done, sprinkle them with two tbsp of lemon and set aside.

  3. Prepare the beef stock and have it simmer on very low heat.

  4. Cut the onions and mushrooms in small pieces or to your liking.

  5. In 1 tbsp of margarine or butter, saute the onions until soft.

  6. Add the mushrooms and stir for 3'-5'.

  7. Add the rice and saute alltogether for 3'-4'.

  8. Add the wine and lower the heat to low. Stir until the rice absorbs the wine and add half a cup of beef stock.

  9. Continue stirring while adding half cups of the stock until the rice has absorb all the stock.

  10. Before your final cup of stock, taste for salt and pepper and adjust accordingly.

  11. After the last cup has evaporated, turn off the heat and add the rest of the butter.

  12. Stir well and add the grated cheese and the asparagus cut in pieces or to your liking.

  13. Serve with fresh pepper and sprinkle with lemon zest.
