Using peas, asparagus, and tomatoes

Recipe Ingredients for Spring Penne

5 oz penne rigate, boiled according to package
2 oz parmesan cheese, grated
1 cup cherry tomatoes
16 oz asparagus (thin), trimmed and chopped into 1 inch pieces
1 1/2 tbs olive oil
1 clove garlic
2/3 cup green peas
2/3 cup chicken broth

Recipe Directions for Spring Penne

  1. Start water to boil penne; add once it comes to a rolling boil and follow package directions.

  2. saute garlic in olive oil until fragrant and lightly brown (not long)

  3. Add chopped asparagus, and continue cooking another two minutes, then season with salt and pepper to taste; all the while keep an eye on your pasta and drain once cooked to al dente-- set aside in a serving bowl.

  4. Add tomatoes, peas, and chicken broth and continue cooking approximately 3 minutes or until tomatoes just begin to pop and broth is reduced by half.

  5. Toss shredded parmesan in a bowl, until well combined and parmesan has melted and coated other ingredients; add pasta
