Wonderful breakfast dish that is perfect for Sunday brunch. Egg whites are very lean protein which you can have at almost any meal. Omelets aren't just for breakfast!

Recipe Ingredients for Spring Omelet Primavera

4 egg whites
4 tbsp water
1 black pepper, freshly ground to taste
1/4 c mushrooms
1/8 c green pepper
1/8 c chopped onion
2 tbsp chopped basil

Recipe Directions for Spring Omelet Primavera

  1. Saute' veggies in several teaspoons of water or chicken stock (no sodium added) in non-stick pan until tender. Set aside.

  2. Heat non-stick skillet over low to medium heat.

  3. Mix egg whites, water, and pepper, beating with fork until foamy.

  4. Pour eggs in skillet. Cook 2-3 minutes as eggs cook, pull sides gently towards center with spatula, allowing uncooked egg to spill into open skillet area.

  5. When eggs are nearly cooked, sprinkle vegetables over eggs and fold omelet in half. Cover and continue cooking, 1-2 minutes or until eggs are done.
