Recipe Ingredients for Spring Fritatta

7 large Egg, White
0.5 cup Lowfat Plain Yogurt
1 tbsp Organic Salted Whipped Butter
1 tbsp Extra Virgin Olive Oil
1 cup Ramps
2 tablespoon Tarragon
5 g Shitake Dried Mushrooms
2 ea. Raw Tomato Cherry
3 oz Feta Cheese Crumbles

Recipe Directions for Spring Fritatta

  1. Sautee chopped ramps in oil & butter, add chopped leaves and mushrooms (fresh, actually, but not available on the list).

  2. Mix eggs, yogurt, feta, s& p, and chopped tarragon in a bowl.

  3. Pour over sauteed vegetables in a cast iron pan.

  4. Cook over medium heat for about 10 minutes. Slice tomatoes and put over the top, plus a small sprinkle of feta.

  5. When the top is partly set, put under the broiler for 4-6 minutes, until set & a little browned.
