chicken one pound garlic 2 zucchini 1 onion 2 tomatoes 1/3 cup reduced fat feta cheese 4 tablespoons lemon juice 4 teaspoons canola oil 1 cup edamame 1 tablespoon basil

Recipe Ingredients for spring chicken

1 cup, halves(152 g) Strawberries

Recipe Directions for spring chicken

  1. In ziplock bag,combine 3 tablespoons lemon juice,2 teaspoons garlic,and 2 teaspoons basil. Season to taste with salt and pepper. Add chicken tenders and turn bag to coat.

  2. Heat 2 teaspoons oil in large skillet over med heat. Add onion, remaining garlic,edamame and tomatoes. Saute 4 minutes. Dice zucchini, and add to skillet. Saute 3 minutes more. Transfer to serving bowl and toss with feta cheese. Add remaining oil to skillet. Remove chicken from marinade and saute 2-3 minutes till cooked. serve with vegetables.
